Fluffy American Pancakes

Hands up if you are a pancake lover ?


In our house ,we can't get enough of pancakes and the simpler the recipe the better. I love everything about these pancakes. First, they are extremely quick and easy to prepare, with only a few basic ingredients that everyone has at hand (yes everyone: egg, milk, flour, sugar, butter , vanilla essence & baking powder – that’s it!). Then, they turn out perfect each single time I make them, with a lovely small round shape, and an amazing fluffy and light texture. And finally, they make me hungry as soon as I see them!






Ingredients

  • 1 Cup Plain Flour

  • 2 Tsp of Baking Powder

  • 1 Tbsp of Sugar or honey

  • Pinch of Salt

  • 2 Tbsp of melted butter or oil

  • 1 cup / 240 ml of milk

  • 1 large egg

  • 1 tsp Vanilla extract



Here’s how to make them:



  1. First, mix all the dry ingredients.

  2. Then mix the wet ingredients in a separate bowl.

  3. Add the dry ingredients to the wet ones and mix (do not overmix).

  4. My secret: let the batter sit for a minute or two. It will allow the baking powder to activate and make your pancakes fluffy.

  5. Heat oil or butter in a skillet and once hot, add a few tablespoons of the batter, making sure they don’t spread out to the outside.

  6. Cook for a minute, until fluffy. Flip, and cook for another minute.

And voilà! You have perfectly fluffy pancakes in NO TIME!


What to serve with my pancakes? Maple syrup - Yes, maple syrup is my favourite topping for pancakes, always. Because these pancakes are so fluffy, they absorb the maple syrup right away, bringing a subtle sweet touch. Other topping ideas you may also consider:

Berries - We love strawberries, raspberries any berry really

Nutella & banana - is there anything better than nutella on a pancake ?

Lemon + sugar - This is a classic , so simple but so yummy.
